Recipe of the Month: Fresh Tomato Salsa with Cheese

Makes two servings

Ingredients:

  • 2 cups chopped tomato
  • 2 chopped jalapeño peppers 
  • 1/2 cup reduced fat crumbled feta cheese
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper
  • 4 tablespoons lime juice
  • 4 tablespoons chopped cilantro

Preparation:

  1. Combine the tomatoes, jalapeño peppers, lime juice, salt and pepper in a medium bowl and toss.
  2. Add in the cilantro and the cheese.
  3. Serve as is or chilled.
