Makes six servings
Ingredients:
Quinoa
- 1 cup quinoa (white or red)
- 2 cups water
- Pinch of salt
- Honey Lime Dressing
- Juice of 1 large lime
- 3 tablespoons honey
- 2 tablespoons finely chopped fresh mint
Fruit
- 1 ½ cups blueberries
- 1 ½ cups sliced strawberries
- 1 ½ cups chopped mango
- Extra chopped mint garnish (optional)
Preparation:

Rinse the quinoa under cold water. Add quinoa, water and salt to a medium saucepan and bring to a boil.

Boil for about five minutes. Simmer for about 15 minutes or until water is absorbed. Be sure not to burn!

Remove pan from heat and fluff quinoa with a fork.

To prepare the dressing, whisk the lime juice, honey and mint together.

Combine the fruit and quinoa in a large bowl, and pour in the dressing. Mix to combine all ingredients.

Serve at room temperature or chilled.
Feel free to add your favorite fruits to this salad recipe!
