Recipe of the Month: Quinoa Fruit Salad with Honey Lime Dressing

Makes six servings

Ingredients:

Quinoa

  • 1 cup quinoa (white or red) 
  • 2 cups water
  • Pinch of salt
  • Honey Lime Dressing
  • Juice of 1 large lime
  • 3 tablespoons honey
  • 2 tablespoons finely chopped fresh mint

Fruit

  • 1 ½ cups blueberries
  • 1 ½ cups sliced strawberries
  • 1 ½ cups chopped mango
  • Extra chopped mint garnish (optional)

Preparation:

    1. Rinse the quinoa under cold water. Add quinoa, water and salt to a medium saucepan and bring to a boil. 

    2. Boil for about five minutes. Simmer for about 15 minutes or until water is absorbed. Be sure not to burn!

    3. Remove pan from heat and fluff quinoa with a fork. 

    4. To prepare the dressing, whisk the lime juice, honey and mint together.

    5. Combine the fruit and quinoa in a large bowl, and pour in the dressing. Mix to combine all ingredients.

    6. Serve at room temperature or chilled.
