Ingredients:
- 1 tablespoon olive oil
- 1 pound fresh sugar snap peas
- 1 teaspoon lemon zest, freshly grated
- ½ teaspoon sea salt
- ¼ teaspoon ground black pepper
Preparation:

Heat oil in a skillet over medium-high heat.

Add the snap peas and toss to coat them with oil.

Cook for two minutes, and stir frequently to avoid burning

Add in the lemon zest, salt and pepper.

Cook for three to five minutes, until the snap peas begin to puff up

Serve immediately.
