Make toast a real meal with some fresh summer ingredients. The slices of toast will keep for one day if they are tightly wrapped in wax paper and stored in a refrigerator.
Ingredients:
- 2 slices of 100% whole wheat bread, toasted
- ½ avocado
- 1 medium tomato, sliced
- ½ cup cucumber, sliced
- 2 cups spinach
- Black pepper
- Red chili flakes, optional
- 1 tablespoon lemon juice
Preparation:

Mash avocado with fork and spread on bread.

Add cucumber, tomato, black pepper and spinach. Optional: sprinkle with red chili flakes.

Drizzle with lemon juice and serve.
